Controllers for bread and pizza deck ovens
Vcolor 378 is a controller for electric bread and pizza deck ovens with a remote touch-screen user interface in 5- or 7-inch glass (available in both vertical and horizontal version) which fits in perfectly with the design of the unit. It can control up to 5 levels through an RS-485 network of power boards connected to a single user interface, which also allows centralised management with power shared between the decks. Centralised management can also be enabled by connecting control kits (interface + power board), one for each deck and up to a maximum of 5, via the RS-485 serial port.
It manages steam (generation, injection and venting) in both automatic and manual mode and independently regulates the power and temperature of the top, floor and front heating elements. Being able to control temperature of the front heating element is particularly important for certain baked goods. The controller has also an oven cleaning function which uses pyrolysis, a self-cleaning mechanism that does not require chemical detergents as food residue is oxidized at high temperature.
The controller can save up to 99 recipes; each recipe can have up to 8 phases, each with independent settings for duration, temperature, steam injection cycles, venting and suction. Recipes can be compiled in an ODS file (complete with pictures in BMP or GIF format) and uploaded to the controller using a USB flash drive, thanks to the innovative programmable platform which allows users to customise their recipes and add new languages. They can also be altered, overwritten and saved as favourites directly from the display. From the display, users can also programme, for every day of the week, the switching on and off of two different recipes.
Users can interact remotely with their equipment, including starting/stopping working cycles, using the EPoCA® cloud platform with Wi-Fi or Ethernet connectivity (which also enables alternative or parallel control through MODBUS TCP).
